Macabeo is a very useful variety for sparkling wine production. This was our first bet at the beginning of our project. It’s our first wine, that is why we feel a profound respect for this variety. It is not very used for quiet wines. Increasingly, more people dare to work with it and we are happy for that. Our macabeo comes from ancient clones vineyards. This is very important for us and for the result of our wine, since these vineyards were seeded approximately in 1967. In those days small bunches of grapes with thick skin were grown, which are very different from today’s clones plantations.
Varieties: Over 35 years old Macabeu, Llorenç del Penedès, Tarragona. Ecological agriculture not certified.

We suggest you try it at a temperature between 10 and 12ºC; at this temperature, it allows appreciation of all the aromatic characteristics arising from the aging and from the variety.
